När vi något i vår kött- och charkproduktion vill vi att det ska bli riktigt bra och smaka väldigt gott! Vi lägger stor vikt vid råvaran och hantverket bakom de varor vi förädlar. Hos oss får det ta tid, huvudsaken att det blir bra gjort och den fina smaken sitter. Många gånger behöver det inte vara så komplicerat – receptet till vår populära wienerkorv sträcker sig så långt tillbaka som 1916. Kötthalt över 70 procent av nöt och fläsk som vi kryddar med ingefära, muskot och vitpeppar. Den finmalda blandningen stoppar vi för hand i fårtarm för det rätta knäppet, avslutningsvis får korven rökas på klassiskt vis med alspån.
Det här är Johan
År 1916 etablerade Johan Andersson sin egen charkuteributik i Stora Saluhallen i Göteborg. Företaget hette Johan Andersson, men han blev snart Johan i Hallen med göteborgarna och känd för att ha ett av stadens bästa köttsortiment. Till en början styckades och såldes främst kött av nöt, gris och lamm. Men efterhand så vann charkuterierna terräng och man börjande producera egna syltor, pastejer och korvar. Den klassiska tjuren i logotypen kom senare att bli en stark koppling och symbol för Johan i Hallen, och den lever vidare i det nya varumärket, om än i mindre skala.
